Sriracha Lime Popcorn

SrirachaPopcorn3Time is a funny thing, isn’t it? It stretches and speeds by fast enough to make my head spin.

Back when I was young, I thought by the time I was 26 I would have everything figured out. Mid to late twenties was OLD. Waaaaay far away. I figured I’d be married, have a couple kids and a dog, own a big house with a huge yard, have a kick-ass career and buy things like duvets and home insurance. My nine year old self thought being a grown up meant, well, being grown up.

Turns out it doesn’t. Twenty six, thirty, fifty, these ages aren’t old in any means. Sure, by that age you’re legitimately grown up, but does anyone ever feel grown up? Are there people out there who wake up in the morning, have a good stretch, and think “hey, let’s do grown up things today”?

Yes, I have a career, I wake up at 5:45 like clockwork, I have green smoothies for breakfast, I try to exercise regularly, I make appointments, have dinner parties, and do my chores willingly. I do these things because I’m a grown woman, but I never feel grown up.

I still smack my alarm with rage when it goes off in the morning, I still love to sleep in (even if “sleeping in” means sleeping until 8:30 am these days), I still laugh at inappropriate jokes (all the time), mentally count my piggy bank when bill time comes around, and can think of no better way to spend a rainy Friday night than by having a Harry Potter marathon.

My point is, we’re all just people trapped in adult bodies, figuring shit out as we go. What’s life, other than a series of choices and mistakes? There’s no handbook that teaches you all this adult stuff.

We just wing it.

SrirachaPopcorn4So today’s post is for the grown up children in all of us. Who doesn’t love a big bowl of popcorn? Especially when it’s seasoned with spicy Sriracha sauce and a fresh kick of lime.

Kids: Popcorn is yummy and buttery and crunchy and gimme a whole bowl to myself, please, while I watch the Half Blood Prince in my flannel pajamas.

Adults: Popcorn is actually a great, low calorie snack that can be enjoyed without the guilt. Just be sure to floss after eating.

Sriracha Lime Popcorn

An easy, addicting snack. Spicy with a fresh kick of lime.
Ingredients
  • ½ cup popcorn kernels
  • 3 Tbsp canola oil
  • 2 Tbsp butter, melted*
  • 2 Tbsp Sriracha
  • Juice and zest of 1 lime
  • ¼ tsp salt
Instructions
  1. In a large, heavy bottomed pot over medium heat, heat canola oil. Place three popcorn kernels in the pot. Once kernels have popped, remove from heat and add the rest of the kernels in a thin, even layer. Cover and count to 30 seconds before placing pot back on heat. The popcorn should start popping. Shake the pot to move the kernels around and avoid burning. When popping begins to fade, remove from heat and transfer to a large bowl. This method heats the oil to the right temperature first, then heats the kernels to near-popping temperature so that they pop at the same time, lessening the chance of any kernels burning on the bottom of the pot.
  2. Stir together the butter, sriracha, lime juice and zest. Slowly (very slowly!) pour over top of the popcorn, mixing after each little bit. Pouring too fast will result in soggy popcorn.
Notes
*Use real butter for this, no exceptions. Margarine has a high water content, which will turn your popcorn into a soggy mess.
