At the risk of sounding obnoxious, I want to start off this post with a quote. People either love quotes or hate ’em (I hope you fall into the latter category).

I was given a stack of about 20 quotes a few weeks ago, and was told to close my eyes and pick just one. In choosing this one specifically, I firmly believe the Universe was trying to tell me something.
Slow down. Sometimes life rolls along at full-tilt, and amidst doing all the things you have to do, you forget to carve out time for the things you love to do.
I’ve spent the last few months (shamefully, almost a year) avoiding this blog. It hurts to admit, but I was, in fact, avoiding it, simply because I was afraid of starting it up again and then failing. The longer I left it, the harder it was to pick back up. What used to be a fun and creative outlet slowly turned into a stressful list of “to-dos” that snowballed into almost unmanageable territory.
Make the recipes, cook the things, stage the scene, take pretty pictures, edit the pictures, upload the pictures, write a compelling story, post it, share it, repeat.
Having this looming cloud of Blog Responsibilities above my head while dealing with real-life things like a full time job, commuting almost 2 hours every day, walking the dog and making actual dinners every night without the pressure of photography, it made the blog seem more like a second job and less like what it was supposed to be from the start.
I needed some time away from the blog to reset my priorities and remember why this was so important to me in the first place. Sure, the subject of this blog is FOOD, which I will always be enamoured with, but most importantly, it’s supposed to be a fun, creative outlet that connects me to a close friend. It should be comforting, not stressful.
I don’t have to do all of the things all at once. As long as I do some of the things, a little bit each day, it’ll be manageable. And more importantly, fun!
So lets dive right into this soup. My husband whipped this up for me one night when I was fighting a cold and we were too lazy to go grocery shopping. After 15 minutes of playing around in the kitchen, he placed a steamy bowl of this in front of me and I devoured it in seconds. I was very impressed and he got major bonus points for quenching my hanger.
This is the kind of soup you make when you’re pressed for time, haven’t stocked the fridge in a while, but still want something delicious. It uses some basic ingredients you probably always have in your fridge, so it’s the perfect last-minute quick fix.
The base uses a package of Liptons Chicken Noodle Soup. It’s obviously not a replacement for real homemade chicken soup, I just love the convenience and I always have a box in my pantry for emergencies. Adding a few flavourful extras take it from bland to delicious in no time at all.

15-Minute Egg Drop Soup | | Print |
- 1 pouch Lipton Chicken Noodle Soup Mix
- 4 cups water
- 1 tsp grated ginger
- ½ Tbsp soy sauce
- 1 tsp rice wine vinegar
- 1 tsp mirin
- 2 eggs, scrambled
- Chili garlic sauce
- Green onions, to serve
- Boil water as per package instructions.
- Add soup pouch, reduce heat, and bring to a low simmer.
- Stir in ginger, soy sauce, vinegar and mirin. Simmer for 5 minutes.
- Stir in eggs until cooked, one minute.
- Serve with chili garlic sauce and green onions, to taste.

Wow. That one blew my mind. Talk about kicking it up a notch. A quick and delicious soup if you are down with a cold. The ginger helps too!!!
