I’m starting to worry that this whole food blogging thing is going to start wreaking havoc on my waistline. I love to bake, so every week I end up baking a bunch of sweet treats which means buckets of them in my kitchen at all times. It’s really starting to bolster my will-power. I just recently adopted a dog, too (check out this post to see Lola’s infinite cuteness), which means more time at home playing with pup and less time working it out at the gym. At least I’m getting lots of walking in!
I don’t make many cakes or pies unless I know other people will be over later to eat the majority for me. This pie, this honey bourbon pecan pie (um, yes please) would have been gone in a day or two if I was left all by my lonesome. Luckily I was able to share this with friends or I would have eaten it straight out of the pie pan with a fork and licked the pan clean! For serious, it’s that good.

Maybe I decided to make a pecan pie because of my recent, deep-seeded urge to visit the deep south. I’ve never been but I would absolutely LOVE to hop in the car and do a road trip through Louisiana, Alabama, Georgia, South & North Carolina. Any takers? Maybe I’ll put it on my 2015 Bucket List (2014 is already busy!).
I’m not sure if I want to go because of the history, the accents, the swamps and marshes, the culture, the plantations, the FOOOOD. In my mind the south is the complete opposite of home (Vancouver, BC). Who knows if that’s true, but I’ll need to find out one day!
I now have a sudden craving for some sweet tea.
Until I get to that road trip, though, this pie will be about as southern as I get for the next little while. Good thing it’s amazing. And easy! Did I mention that? It really is super easy. Like 1-2-3 easy (really, there are only three steps).
Now friends, come on over so I have an excuse to make this again!
Honey Bourbon Pecan Pie | Print |
- 1 cup packed brown sugar
- ½ cup corn syrup
- ½ cup honey
- 2 Tbsp bourbon
- 3 Tbsp flour
- 1 Tbsp butter, melted
- ½ tsp vanilla
- ¼ tsp salt
- 3 eggs
- 1 cup pecan halves
- 1 prepared 9-inch pie crust
- Preheat oven to 350°.
- Whisk together brown sugar, corn syrup, honey, bourbon, flour, butter, vanilla, salt and eggs in a large bowl. Stir in pecans.
- Pour mixture into prepared pie crust. Bake for 45 minutes until center is set. Cool completely on a wire rack before serving.
