My mom loves to drive. I remember, when I was younger, bombing down the highway in her little blue Honda Civic, tunes cranked, wind blowing through hair, going who knows where. Sometimes we would drive around to look at houses we wished we owned, sometimes to look at Christmas lights, and sometimes we’d drive just for the sake of driving. I don’t remember many destinations, but I do remember many trips.
A frequent stop for us, when on one of these drive-abouts, was to pop in to Dairy Queen. I think my mom preferred the Peanut Buster Parfaits, but I was all about the dipped cone. Chocolate dipped? Nah. Butterscotch? Every time. It was a sad, sad day when we went in and saw that they had discontinued their butterscotch dipped cone. I guess there just wasn’t enough demand for it, and to that I say COME ON PEOPLE. Butterscotch dipped is way better than chocolate dipped, and this is coming from someone who adores chocolate.
It’s been decades since I’ve had a butterscotch dipped cone, and I still miss them, maybe because of the nostalgia that comes with the memory of them.
A decent alternative to the dipped cone is that Magic Shell stuff that you can buy at grocery stores. It pours out chocolaty smooth, and within seconds turns into a crunchy, hard shell atop ice cream.
Imagine my surprise when I figured out I could make this at home, and have my butterscotch dipped ice cream any time I wanted.
This is one of those posts I make where I almost feel like I’m cheating at this whole food blog thing. I feel strange calling this a recipe, since it’s the easiest thing to put together (2 ingredients!) and takes mere seconds to make. But it’s pretty magical, so I just had to share it.
Just melt some butterscotch (or chocolate) chips with some coconut oil, pour it over ice cream, and watch as it hardens within 20 seconds. Coconut oil, while liquid at high temperatures, congeals when at room temperature. When it’s melted with chocolate it’s the perfect liquid consistency, but when poured over cold ice cream it hardens almost instantly.
And bonus, this is definitely healthier than the store-bought stuff!
Butterscotch Magic Shell for Ice Cream | | Print |
- ¼ cup butterscotch chips (or any kind of chocolate chips)
- ½ Tbsp coconut oil (measured when solid)
- In a microwave-safe bowl, heat chips and coconut oil in 20-second intervals, stirring after each, until melted. Stir well and immediately pour over ice cream. Wait 20-30 seconds for it to harden completely, then serve!

I remember when Magic Shell first came out, butterscotch was one of the three original flavors along with chocolate and strawberry. Smuckers stopped making that flavor years before DQ stopped the flavor. So glad I can enjoy it again

Omy omy, My Son is allergic to chocolate so he’s never had a DQ ice cream cake because they don’t do all vanilla. I’m doing this to make the crunchie butterscotch filling with the vanilla oreos, white cake and vanilla ice cream, whipped cream frosting!!! He’s gonna love it.
