Mango, Bacon & Feta Pizza

MangoBaconFetaPizza1This pizza is a result of me after work one day, not feeling like grocery shopping at all and determined to make something out of what I had buried in the depths of my fridge.

Some days the absolute last thing I feel like doing is perusing the grocery store trying to think of something to make for dinner. When I grocery shop, I’ve already planned my meals/what I’m going to make for the week, I’ve made a highly-detailed list of everything I need and organized it into sections according to the areas of the grocery store. (Produce first, then deli, then bulk, then meat etc… I like making lists and I like being organized. It’s great.)

MangoBaconFetaPizza5This is especially true during the summer months when it’s just too darn nice out to be inside a store comparing the price on ___ vs ___. So on those days I don’t have dinner plans I’ll eat whatever I can scrounge up. This usually means pizza, because it’s so versatile, but sometimes it does mean cereal for dinner (even food bloggers have bad days). 

This pizza is the best of everything: spicy, sweet and salty. It may sound like a weird flavour combination but it works, trust me. Cut up a bit of jalapeno, dice a little mango, crumble a little bacon, sprinkle a little feta and you have a vibrant, wonderfully fresh dinner. I’ll admit when I pulled all these ingredients out of my fridge I was a little skeptical – bacon and mango? that’s…interesting – but the end result was pretty darn tasty.

Mango on a pizza is pretty similar to pineapple, but less tart and bitter tasting. Plus, the freshness of the mango is so great paired with spicy jalapeno.

MangoBaconFetaPizza4I restrained myself from eating this entire pizza in one sitting, just so I could have leftovers for work the next day. It may have been even better a day later – I absolutely LOVE cold pizza leftovers. Weird?

My pizzas rarely ever turn out round. I have such a difficulty rolling out a perfectly round pizza dough – how do people do it? Usually when I’m the one doing the rolling it ends up in some weird rhombus shape. I blame it on my rolling pin.

Mango, Bacon & Feta Pizza

Spicy, sweet and salty! This pizza makes the tastebuds sing.
Ingredients
  • 1 prepared pizza dough
  • 1 mango, diced
  • 8 slices bacon, cooked and crumbled into bits
  • 1 jalapeno, seeded and sliced
  • Tomato sauce
  • Feta cheese, crumbled (2-3 cups worth)
  • Parsley, for topping
Instructions
  1. Preheat oven to 450°. Place a pizza stone in the oven to warm as temperature rises. If you don't have a pizza stone, use a baking sheet, but do not preheat.
  2. Roll dough out on a lightly floured surface and cover with tomato sauce. Add feta, mango, jalapeno and bacon.
  3. Bake for 15-20 minutes. Sprinkle with parsley, slice and serve.
