Let’s make this short and sweet today. It’s the Friday of a long weekend here in most parts of Canada and I think the last thing people want to do right now is read some saga. Today I’ll go by the mantra that I lived by during design school.

Another popsicle recipe! I realize I’ve been all about the lollies this summer. Forgive me, but my popsicle mold and I are having a moment right now. We just understand each other.
The inspiration from these pops came from a popsicle stand at a local farmer’s market. They had delicious flavours like Blackberry Mojito and Raspberry Cheesecake, but I ventured out and tried an Avocado Lime. I’m trying to up my greenery intake and also, it just sounded so crazy that I had to try it. Turns out, the two make a great pair.
I really dig these popsicles (can I say I dig something, or is that too old school these days?) because they have minimal ingredients, they take no time at all to whip together, and they’re actually good for you. Like, really good.
Avocado, lime, coconut water, and a bit of honey if you like to sweeten it naturally. That’s it. The result is a creamy, tangy, refreshingly green popsicle that’ll make you glow inside and out.
Now, you don’t have to use coconut water. I realize there are those who don’t like the flavour of coconut and/or don’t enjoy shelling out $4 for a can of it. You can easily replace the coconut water with just plain ol’ water.
So there it is. Try these babies, you won’t be disappointed. Enjoy your weekend!
Avocado, Lime & Coconut Popsicles | | Print |
- 2 large avocados, peeled & diced
- 2 Tbsp honey (optional)
- 4 Tbsp lime juice
- 1 tsp lime zest
- 1½ cups coconut water (or just plain water)
- In small bowl, mash together the avocado and honey. Transfer to a blender or food processor. Add in lime juice, zest, and coconut water Blend until smooth, scraping down the sides as needed.
- Transfer to popsicle molds and freeze for at least 7 hours before serving.

Are you using the noropro popsicle molds? Can you link to them on Amazon?
How do they release from the molds? With ease?

Yup, I use the Norpro molds, found here. I love them! The popsicles take a bit of coaxing to remove, just like any other popsicle mold. Nothing a little patience and warm water won’t solve!
