Apple Oatmeal Muffins

Ingredients
  • 1¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ½ cup (1 stick) butter, softened
  • 1 cup packed brown sugar
  • ½ cup white sugar
  • ½ cup unsweetened applesauce
  • 2 eggs
  • 2 tsp vanilla extract
  • 3 cups whole oats
  • 2 cups finely diced apples*
Instructions
  1. Preheat oven to 350°F. grease a 12-cup muffin tin; set aside.
  2. In a small bowl, combine the flour, baking soda, salt, cinnamon, and nutmeg; set aside.
  3. In a large mixing bowl, cream together the butter and sugars until fluffy. Beat in applesauce, eggs, and vanilla. Stir in oats and diced apple by hand, being careful not to overmix.
  4. Distribute the batter into the muffin cups and bake for 18-22 minutes until a toothpick inserted in the centre comes out clean.
Notes
*use red apples for a sweeter taste, or green apples for a tarter taste.

The apples pieces will soften more the longer the cookies sit. Store in an airtight container for up to 4 days.
