Zingy popsicles that just scream summer! Chunks of strawberries make these pink lemonade popsicles fun to eat!

Serves: 10 popsicles
Ingredients
½ cup freshly squeezed lemon juice
2 tsp lemon zest
¼ cup granulated sugar, or to taste*
2 cups water
6-7 fresh strawberries
Instructions
In a food processor or blender, combine lemon juice, zest, sugar, and water. Add a strawberry and blend until smooth, adding more strawberries for a deeper pink hue, if preferred.
Pour the lemonade into popsicle molds, and freeze until somewhat firm, about 1 hour.
Slice the remaining strawberries and insert slices into popsicle molds, using a knife to push them into the popsicles. The lemonade should be somewhat frozen to allow the strawberries to stay put, rather than float to the top.
Freeze until sold, about 6 hours.
Notes
*Some people prefer sweeter lemonade, some prefer it more tart. Start out with ¼ cup of sugar, then add more if you need it.
