Cantaloupe in a Cardamom-Spiced Syrup
 
 
Cantaloupe is one of summer's hidden gems. The juicy melon makes for a lovely, simple dessert when tossed with a homemade spiced syrup.

Ingredients
  • ½ cup granulated sugar
  • ½ cup water
  • 2 Tbsp grated fresh ginger
  • 12 cardamom pods, crushed
  • 2 Tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 cantaloupe, peeled, seeded, and diced into 1-inch pieces
  • Ground cardamom (optional)
Instructions
  1. In a saucepan over medium heat, add the sugar and water, stirring until sugar dissolves. Add the ginger, cardamom pods, lemon juice, and lemon zest, and simmer for about 10 minutes until thickened. Let cool and then strain through a fine mesh sieve.
  2. Toss together the cantaloupe and syrup; serve with a sprinkle of ground cardamom, if desired.
