Cold Brew Coffee Popsicles
 
 
Cold brew coffee - made by steeping coffee grounds in water overnight - is a bit sweeter and less bitter than regular coffee, which makes it perfect for enjoying iced on a hot day. Mixed with a little sweetener and a little milk, these popsicles are a summer staple!

Ingredients
  • Cold Brew Coffee Concentrate*:
  • 1 cups coarsely ground coffee beans
  • 4 cups cold water
  • .
  • Popsicles:
  • 1 cups cold brew coffee
  • 3 Tbsp sweetened condensed milk
  • 1½ cups milk
Instructions
  1. In a large jar or bowl, add coffee beans, then pour the water over top. Stir gently. Cover and refrigerate for about 12 hours. Strain twice through a fine mesh sieve lined with cheesecloth.
  2. In a large bowl, mix together the cold brew coffee, sweetened condensed milk, and milk. Taste test the mixture, adding more coffee, milk, or sweetener, to your liking.
  3. Fill popsicle moulds and freeze until completely solid.
Notes
*This recipe will yield some extra coffee concentrate. This is potent stuff, so you don't want to drink it straight! It's meant to be diluted with either more water or milk. I like to make a double batch (2 cups coffee, 8 cups water) and keep a jug of it in my fridge for the week!
