Peach, Ginger & Goat Cheese Turnovers

Ingredients
  • 1 square frozen puff pastry, thawed overnight in the refrigerator
  • ⅓ cup peach jam
  • ½ tsp fresh ginger, grated
  • ⅓ cup goat cheese
  • 1 egg, lightly beaten + sprinkle of water (egg wash)
  • Sesame seeds (optional)
Instructions
  1. Preheat oven to 400 degrees. Line a large baking sheet with parchment paper.
  2. In a small bowl, mix together peach jam and ginger. Set aside.
  3. On a lightly floured surface, roll out puff pastry into a large rectangle. Cut rectangle down the centre lengthwise, then cut each half into 3 smaller rectangles of roughly equal size.
  4. Place a heaping spoonful of goat cheese on each rectangle, follow with a spoonful of the peach jam mixture. Fill a small bowl with water. Gently brush the edges of each rectangle with water and then fold them over, width-wise. Crimp the edges of each pastry with a fork to seal everything in.
  5. Gently place the pastries on a large baking sheet, at least 1.5 inches apart. Brush the tops with the egg wash, sprinkle with sesame seeds and bake for 20 minutes, until golden brown and puffed up.
