Ingredients
  • 2 Tbsp olive oil
  • 1 small onion, diced small
  • 2 carrots, peeled and cut into ¼-inch dice
  • 2 ribs celery, cut into ¼-inch dice
  • 2 cups green beans, chopped into ¼-inch pieces
  • Salt and pepper, to taste
  • 4 cloves garlic, sliced thin
  • 4 fresh thyme sprigs
  • 2 bay leaves
  • 7 cups low-sodium stock (chicken, beef, or veggie stock)
  • 400 g tortellini, any flavour you prefer
  • Fresh Parmesan cheese, to serve (optional)
Instructions
  1. Heat oil in a large, heavy-bottomed pot. Saute onions until softened, about 5 minutes. Add the carrot, celery, and green beans. Season well with salt and pepper. Saute vegetables until softened, about 10 minutes.
  2. Add garlic, thyme, and bay leaves and cook for another 2-3 minutes until garlic is fragrant.
  3. Add the broth. Bring to a boil, then add tortellini and cook until al dente, about 7 minutes (or according to package instructions). Discard thyme sprigs and bay leaves.
  4. Serve soup in bowls and garnish with Parmesan, if desired.
