Sweet & Spicy Roasted Nuts

Ingredients
  • 1 lb. unsalted mixed nuts (almonds, cashews, walnuts, pecans, peanuts- whatever you like)
  • 1 egg white, beaten until frothy
  • ¼ cup brown sugar
  • ½ cup granulated sugar
  • ¼ tsp smoked paprika
  • ⅛ tsp cayenne pepper
  • 1 tsp salt
  • 1 Tbsp Tabasco
Instructions
  1. Preheat oven to 300 degrees. Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, beat egg white until frothy but not creating peaks. Gently stir Tabasco in to the egg whites. In a separate small mixing bowl, combine sugars, paprika, cayenne and salt.
  3. Pour nuts into the egg white mixture and stir to coat. Sprinkle dry ingredients into the nuts and stir to coat. Spread nuts out on the lined baking sheet in a single layer. Bake for 30 minutes.
  4. Remove from oven and let cool completely. Break nuts apart from each other, they should break apart very easily when fully cooled. If they stick, let them cool more. Store in a cool, airtight container.
