1 medium sized ginger root,* cut into slices (~1 cup)
2 cups water
1 cup sugar

Instructions
Bring the cup of water and sugar to a boil in a medium saucepan. Add the ginger and lemongrass and reduce heat to a low simmer for 30-45 minutes (the longer you let it sit, the stronger the ginger punch. I like mine extra punchy so sometimes I'll leave it for as long as an hour).
Use 2-4 tsp over ice per glass of sparkling water (adding more for a sweeter drink).
Notes
* The more ginger you use, the more bite your finished syrup will have. I like a lotta bite, so I veer on the medium-large end of the ginger root spectrum.
