Minty Cookies and Cream Cookies

Cookies inside of cookies! Bursting with chunks of Oreos and flavoured naturally with actual mint leaves.

Ingredients
  • 2¾ cups all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 cup butter (2 sticks), softened
  • 1 cup granulated sugar
  • ¼ cup packed brown sugar
  • 1 egg, lightly beaten
  • 1 tsp vanilla extract
  • about 15 Oreo cookies, coarsely chopped
  • ¼ cup fresh mint, finely chopped
Instructions
  1. Preheat oven to 350F. Line two baking sheets with parchment paper; set aside.
  2. In a small bowl, mix together flour, baking soda, and salt; set aside.
  3. In bowl of a stand mixer, cream together the butter and sugars until fluffy. Beat in egg and vanilla.
  4. Slowly add in the dry ingredients to the wet ingredients until just incorporated. Stir in Oreo pieces and mint.
  5. Cover dough and refrigerate for about 30 minutes. This not only chills the dough, but allows the mint to really seep into the dough for added flavour.
  6. Drop tablespoon-sized balls of dough onto prepared baking trays, then flatten into disks with your hand. Bake 10-12 minutes until cookies are set in the middle and golden around the edges. Let cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
