Black Bean Quinoa Salad with Lime Vinaigrette

Ingredients
  • 1 cup dried quinoa
  • 1 small tin black beans, rinsed
  • 1 punnet grape tomatoes, halved
  • 1 red, orange or yellow bell pepper, diced
  • ½ long english cucumber, diced
  • 1 avocado, diced
  • ¼ cup feta cheese, drained and crumbled
  • 1 small bunch fresh cilantro, coarsely chopped
  • .
  • Vinaigrette:
  • 2 limes, juice and zest
  • 1 Tbsp olive oil
  • 2 cloves garlic, crushed
  • 1 tsp ground cumin
  • Salt and pepper
Instructions
  1. Place 1 cup quinoa and 2 cups water in a medium saucepan and bring to a boil. Turn heat off, cover and let sit for 20 minutes. Remove lid and fluff with a fork.
  2. Whisk all vinaigrette ingredients together.
  3. Add the quinoa and the rest of the salad ingredients to a large bowl and mix gently. Drizzle vinaigrette over salad and toss to coat.
