Baby Kale Salad with Roasted Sweet Potatoes, Chicken & Cranberries

Ingredients
  • For the sweet potato:
  • 1 sweet potato, peeled and diced (about 3 cups)
  • 1 Tbsp olive oil
  • ½ tsp chili powder
  • ½ tsp paprika
  • salt and pepper, to taste
  • .
  • For the dressing:
  • 3 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • ½ Tbsp honey
  • .
  • For the salad:
  • 8 cups loosely packed baby kale
  • 3 cups roasted sweet potatoes
  • ¼ cup quinoa, cooked and ready to go
  • 1½ cup shredded chicken
  • ½ cup dried cranberries
Instructions
  1. To roast the sweet potatoes: preheat oven to 350°. Mix together sweet potato, olive oil, chili powder, paprika, salt and pepper. Place on an unlined baking sheet and bake for 25-30 minutes, stirring occasionally, until golden brown and softened.
  2. To make the dressing: Whisk together the olive oil and balsamic, then slowly whisk in honey until combined.
  3. Make the salad: Toss together the roasted sweet potatoes, kale, quinoa, chicken, cranberries and dressing. Enjoy!
