Goat Cheese Stuffed Mushrooms Wrapped in Bacon

These bite-sized appetizers are a real crowd pleaser. Mushroom caps stuffed with goat cheese, crunchy panko crumbs and seasoning, then wrapped in bacon!

Serves: 24 stuffed mushrooms
Ingredients
  • 24 large white mushrooms, stems removed
  • 300g goat cheese, crumbled
  • ¼ cup fresh parsley, chopped
  • ½ tsp red chili flakes
  • ¼ cup panko crumbs
  • 12 strips bacon, sliced in half
Instructions
  1. Preheat oven to 400°F. Line a baking sheet with aluminum foil, then place a wire rack on top*; set aside.
  2. In a small bowl, mix together the goat cheese, parsley, chili flakes, and panko crumbs.
  3. Stuff each mushroom cap with the goat cheese mixture. Wrap each mushroom with ½ a strip of bacon. If necessary, use toothpicks to keep the bacon in place.
  4. Bake for 15-20 minutes until bacon is nice and crispy. Remove from oven and let cool slightly before serving.
Notes
*Placing the bacon-wrapped mushrooms on a wire rack on top of the aluminum-lined baking sheet allows the bacon to cook on all sides, and keeps it from sitting in the grease. If you don't have a wire rack to place on top, simply place the mushrooms directly on the baking sheet and be sure to rotate as they bake to ensure crispiness on all sides.
