Baked Cardamom-Spiced Donuts with a Grapefruit Glaze
 
 
A light and fluffy baked donut infused with cardamom, topped with a tangy grapefruit glaze. Indulge without the guilt of traditional donuts!

Ingredients
  • Dough:
  • 2 cup all-purpose flour
  • 2 tsp baking powder
  • ⅔ cup granulated sugar
  • 1 tsp ground cardamom
  • 1 tsp salt
  • 4 Tbsp (1/2 stick) butter, softened
  • ½ cup milk, scalded
  • ½ cup light Greek (or plain) yogurt
  • 2 tsp vanilla extract
  • 2 eggs, lightly beaten
  • .
  • Glaze:
  • 2 cups icing sugar
  • 3-4 Tbsp freshly squeezed grapefruit juice
  • .
  • Grapefruit zest, to sprinkle (optional)
Instructions
  1. Preheat the oven to 350°F. Lightly grease a doughnut pan; set aside. (You could also use a muffin tin for muffin-like donuts)
  2. In a large mixing bowl, whisk together the flour, baking powder, sugar, cardamom, and salt.
  3. Add the butter and use your fingers to mix it in with the dry ingredients until evenly distributed. Add the milk, yogurt, vanilla, and eggs and stir until just combined. Do not over mix!
  4. Transfer batter to a piping bag (or a ziploc bag with the tip snipped off) and fill each donut cup about ¾ full. Bake until donuts are lightly golden and spring back to the touch, 13-15 minutes. Let cool slightly.
  5. While donuts are baking, prepare glaze. Beat together icing sugar and three Tbsp of teh grapefruit juice until smooth. Add more grapefruit juice until desired consistency is reached. Dip the top halves of the donuts in the glaze and let sit for 10 minutes until hardened. Double dip them for a thicker glaze. Sprinkle tops with grapefruit zest, if desired.
