Cherry Almond Granola with Honey & Vanilla

Ingredients
  • 2 cups oats (not instant or quick-cooking)
  • ½ cup slivered almonds
  • ¼ cup pumpkin seeds
  • ⅓ cup dried sweetened cherries
  • ¼ cup brown sugar
  • 2 Tbsp coconut oil
  • 2 Tbsp. honey
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 2 Tbsp flax seeds
Instructions
  1. Preheat oven to 300 degrees.
  2. In a medium bowl, mix oats, almonds, pumpkin seeds and brown sugar.
  3. In a small bowl, mix coconut oil, honey, vanilla and salt.
  4. Pour wet ingredients into dry ingredients and mix well.
  5. Line a baking sheet with parchment paper and spread granola out in a single layer. Bake for 15-20 minutes until fragrant and lightly toasted.
  6. Let granola cool then mix in cherries and flax seeds.* Store in an airtight container.
Notes
* The healthy oils in flax seeds denature in heat so if you add them before baking they will pretty much loose any of their health benefits save for the fiber in their husks. Add them last if you can, once the granola is fully cooled.
