Raw Mint Chocolate Energy Balls

Serves: 50 balls
Ingredients
  • 2 cups Medjool dates
  • 1 cup blanched almonds
  • 2 Tbsp cocoa powder
  • ¼ tsp peppermint oil
  • ⅛-1/4 cup water (as needed)
Instructions
  1. Place all ingredients in a food processor and blend until the mixture becomes a paste. If your dates are a little drier, add ⅛ cup water and blend, up to ¼ cup water if needed.
  2. Line a baking sheet with wax paper. Roll date paste into balls 1½ inches in diameter and lay on wax paper, ¼ inch apart. Refrigerate for 1 hour or overnight, until balls are firm.
  3. Store in a box in the refrigerator for up to 1 month.
