Recipe type: Main
Serves: 6-8
Ingredients
2 Tbsp oil
1 small onion, diced
1 cup cooked ham, diced
⅓ cup all-purpose flour
3 cups milk
1 Tbsp Dijon mustard
½ tsp salt
½ tsp pepper
Pinch of cayanne pepper
2 cups cheddar cheese, shredded
1 cup mozzarella cheese, shredded
3 cups macaroni noodles
2½ cups chopped broccoli
½ cup fresh breadcrumbs
¼ cup grated Parmesan
1 Tbsp butter, melted
Instructions
Preheat oven to 350°F.
In a large saucepan, saute onion and ham in oil until onions have softened, about 5 minutes.
Add flour; cook, stirring for 1 minute. Gradually whisk in milk and cook, whisking constantly, until thick enough to coat back of spoon, 8-10 minutes.
Whisk in mustard, salt, pepper, and cayanne. Stir in cheese until just melted.
Meanwhile, in a large pot of boiling water, cook macaroni for 5 minutes. Add broccoli to the pot and cook until pasta is al dente, another 3 minutes. Drain and return to pot. Add sauce mixture and stir to combine. Pour mixture into a 9x13-inch casserole dish.
In a small bowl, combine breadcrumbs, Parmesan, and butter; sprinkle over macaroni mixture. Bake for 20-25 minutes until cheese is bubbly and top is browned.
Notes
Smother in hot sauce before devouring. Do it, it's worth it.
