Pineapple Ginger Daiquiri with Fresh Mint

Transport yourself to a sunny beach with this tropical cocktail (or enjoy this on a sunny beach, if you are so lucky to have one handy).

Ingredients
  • 1 ripe pineapple, peeled and cored
  • 4 oz dark rum (optional, may be omitted for virgin)
  • 4 oz ginger simple syrup
  • 1 small bunch fresh mint, finely chopped
  • Sparkling water
  • .
  • Ginger Simple Syrup:
  • 1 thumb sized pieces of fresh ginger, chopped
  • 1 cup water
  • 1 cup granulated sugar
Instructions
  1. To make the simple syrup, dissolve the sugar in the water in a saucepan over medium heat. When all the sugar has dissolved, add the ginger and simmer on low for 10 minutes. Remove from heat and set aside. Strain out the ginger pieces. Can be kept in a sealed container in the fridge up to 1 week.
  2. Peel and core a ripe pineapple. Place pineapple chunks in a blender and blend until smooth. Pour pineapple 'smoothie' through a fine sieve- this step is optional but straining out all the fibers makes the pineapple incredible velvety and sumptuous! This is definitely not store bought pineapple juice.
  3. Fill 4 short glasses with crushed ice, about half way up the glass. Add one ounce each of rum and ginger syrup to each of the glasses. Divide the pineapple puree among the glasses and top with a finger or two of sparkling water. Top with a healthy sprinkling of fresh mint.
