Quick & Dirty Peach Pie

Like the name suggests, this peach pie comes together in no time!

Ingredients
  • 2 large fresh peaches, peeled and pitted (or 2 cans halved in juice)
  • 1 frozen pie crust*
  • 1 egg
  • ⅔ cup sugar
  • 5 Tbsp flour
  • ⅓ cup butter, melted
  • 1 tsp vanilla
  • 2 Tbsp brandy or amaretto (optional)
Instructions
  1. Preheat oven to 400.
  2. If you are using fresh peaches: Fill a medium saucepan with water and bring to a boil. Slice an X into the bottom of both your peaches and then pop them into the boiling water for 30-40 seconds, remove them with tongs and run them under very cold water. The skin should peel off quickly and easily.
  3. If you are using canned peaches: lucky you, you just skipped a step. This might even be a 5 minute recipe now!
  4. In a medium mixing bowl, combine the sugar and flour together. Pour in the melted butter and stir well. Add the egg, vanilla and brandy/amaretto and stir to combine.
  5. Lay your peaches, pit side up into the frozen pie crust. If some of them need to be sliced up a bit smaller to get into the cracks, go for it. Pour the batter mixture over the peaches, using a spatula to spread it evenly to the edges of the crust.
  6. Bake for 15 minutes then turn the heat down to 300 and cook for an additional 40 minutes. Cool before serving. Great with vanilla ice cream!
Notes
* I keep a stack of frozen Tenderflake deep dish crusts in my freezer for last minute pies and lazy night quiches.
