Slices of bread topped with fig spread and a slice of brie, baked, and topped with a few sprigs of arugula. The sweet fig, melted brie and tangy arugula compliment each other perfectly. This recipe is easily doubled!

Serves: 12 pieces
Ingredients
12 bite-sized pieces of bread (see note below)
4 Tbsp fig spread
12 slices of brie cheese
Baby arugula
Instructions
Preheat oven to 300°.
Spread a little fig spread over the bread, top with slices of brie and bake for about 5 minutes until cheese is melted. Remove from oven and top with a few sprigs of baby arugula. Serve.
Notes
For the base of these appies you can pretty much use any kind of cracker/bread you like. I prefer a softer bread, since I think it compliments the melted cheese.
Try slicing up pitas, or using mini-slider buns!
