Skinny 'Banoffee' Popsicles

Bananas blended with dulce de leche, greek yogurt and milk, frozen, dipped in chocolate and rolled in graham cracker crumbs. Like a healthy, chilled version of banoffee pie!

Ingredients
  • 3 bananas
  • ½ cup dulce de leche
  • ½ cup skim milk
  • ¼ cup greek yogurt
  • ½ tsp vanilla
  • 6 oz dark chocolate, chopped
  • 1 Tbsp coconut oil
  • 1 cup graham cracker crumbs
Instructions
  1. Blend together bananas, dulce de leche, milk, yogurt and vanilla until smooth. Pour into popsicle molds and freeze for at least 2 hours.
  2. Place a heatproof bowl over a pot of simmering water. Place ⅔ of the chocolate in bowl and heat, stirring constantly, until melted. Remove from heat, add the rest of the chocolate and stir until all the chocolate is melted. Stir coconut oil in the chocolate (this thins out the chocolate for a more even coating on the popsicles).
  3. Pour chocolate in a tall, narrow container (make sure the popsicles will fit) and graham crackers on a plate. Arrange popsicle molds, chocolate and graham crackers in a line. You'll have to work quickly to avoid the chocolate from hardening and the banana popsicles from melting.
  4. Remove a banana popsicle from the mold, dip in chocolate, then roll in graham crackers. Place on a wax paper-lined baking sheet. Repeat with the rest of the popsicles and freeze for 30 minutes before eating.
