Chocolate & Candied Ginger Cookies

These soft and chewy chocolate cookies have a subtle kick of ginger, which enhances the chocolate flavour!

Ingredients
  • ¼ cup shortening
  • ¼ cup butter, softened
  • ½ cup white sugar
  • ¼ cup packed brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup flour
  • ⅓ cup cocoa powder
  • ¼ tsp baking soda
  • ½ tsp ground ginger
  • ¼ tsp salt
  • 1 cup chocolate chips
  • ⅓ cup candied ginger, chopped
Instructions
  1. Preheat oven to 350°.
  2. In a small bowl, mix together flour, cocoa powder, baking soda, powdered ginger and salt; set aside.
  3. In a large bowl, beat together butter and shortening until smooth. Beat in white sugar, brown sugar, egg, and vanilla until thoroughly mixed.
  4. Add dry mixture into the wet ingredients until well blended. Stir in chocolate chips and candied ginger.
  5. Roll dough into teaspoon-sized balls and place on a parchment-lined baking sheet. Bake for 8-10 minutes. Let cool on the sheet for 5 minutes before transferring to wire racks.
Notes
*I make my cookies with half shortening and half butter - I find it makes a softer, chewier cookie that stays 'puffy'. If you don't have shortening you can definitely use all butter (1/2 cup in total), just know that they might flatten slightly when baking.
